The course consists of both theory and practical sessions, and includes exercises and food preparation both in groups and individually, focusing on blending, pasteurizing and freezing procedures.
It provides a good understanding of the secrets of making ice cream and frozen desserts, from the right combination of ingredients for the bases, to the art of presentation, including chocolate, creams, fresh-frits ice-cream and yogurt.
Experienced ice-cream artisans will guide students to the proper ingredients selection and to all the food hygiene rules, leading them to their personal choice of flavours and combinations.
